
Many people enjoy pancakes in the morning, put the refined flour that’s in traditional recipes is not nourishing for the body or conducive to keeping a sexy figure! So, I came up with this delicious recipe that satisfies that craving for pancakes while keeping you lean, healthy and strong!
Ingredients:
(Serves 2)
1 cup almond flour
1 ripe banana
2 eggs
1/2 tablespoon vanilla
1/2 teaspoon cinnamon
1/8 cup water
1 tablespoon coconut oil
1/2 teaspoon baking soda (optional)
Directions:
- Mash banana until runny, add eggs, vanilla, cinnamon and whisk. Once you have a paste, add almond meal and mix. Add enough water to the mix to create a runny but smooth batter.
- Heat oil in a large skillet over low heat. Drop batter by spoonfuls. Make small pancakes so they’re easy to flip and don’t break. Increase heat to medium and cook until each pancake bubbles and the bottom side is browned. Flip and wait until the other side is dry and browned as well.
- Enjoy! Add honey or agave nectar for added sweetness and top with fruit if desired.
